Ingredients

Scale
  • 6 cups of Navy Beans, soaked over night and drained
  • 1 shallot, finely chopped
  • 3 cloves of garlic, smashed
  • Few sprigs of thyme
  • ¼ cup brown sugar
  • 1 tbsp ground mustard
  • 23 cloves, grated
  • ⅓ cup Crosby’s Fancy Molasses
  • ½ litre chicken stock
  • 1 litre water (or less depending on the size of the pot)
  • ½ lb of bacon, rough chopped

Instructions

  1. Preheat your oven to 350 F.
  2. Combine all ingredients except water in a medium sized bean pot, dutch oven, or casserole dish with a lid.
  3. Stir until ingredients are evenly dispersed and then fill with water until beans are just covered (about 1 litre, give or take)
  4. Cover and deposit into the oven for 6-8 hours or until the beans are tender. Check periodically. If beans are dried about before they are tender, rehydrate with more water. Finish with salt and pepper to taste and enjoy!
