Easy Apple Spice Cake
Some of the best cakes are muffin-simple to make, like this easy apple spice cake (a moist applesauce cake).
Some of the best cakes out there are muffin-simple. Made with real butter and good stone-ground flour, they’ve got flavour to spare and have no need to be dressed with frosting.
Plus, there is only one easy pan to clean, not a dozen muffin cups.
Easy Apple Spice Cake is delicious cake that’s a cinch to mix up and makes a wholesome treat. No occasion required.
We make this apple spice cake with stone ground flour and homemade apple sauce but it works just as well with conventional white flour and store-bought apple sauce.
It’s actually a gingerbread, sweetened with molasses and lightly spiced with ginger and cinnamon. As gingerbreads go this one is on the gentle side, denser than hot water gingerbreads but mild in flavour. If you use stone ground flour it’s sweet, nutty flavour will shine through.
Serve this apple spice cake as a snack cake, tuck it in your kids’ lunchbox or sprinkle it with icing sugar and serve it as a dessert.
It’s that kind of cake – forever adaptable to the occasion.Print

I would like to make this cake, but I currently only have blackstrap molasses on hand. Can I use that in place of Fancy molasses?
Hello, thank you for your question. It is better to use fancy molasses for this recipe. -Marie from Crosby’s Kitchen
I serve this with apple sauce. It is so nice together.
This is flipping delicious! Thank you so much for sharing this recipe!
Thank you for giving it a 5-star rate :) -Marie from Crosby’s Kitchen
A minor comment – Easy Apple Spice Cake – method – on line 6 – it says to remove from pan ‘to finish cooKing’…perhaps a wee typo… is it supposed to say “to finish ‘cooling’ ”?
I’m going to bake this…looks good/easy and tastey!
Thank you Jan. Not sure what I would do without you and others who are my front line editors. Thanks for pointing out the typo. All corrected now.
I have a question about the easy apple spice cake. In the information before the recipe you say that the cake is lightly spiced with ginger and cinnamon, but in the recipe ingredients it says to use cinnamon and nutmeg. So what do I use the ginger or nutmeg? Thanks
Hi Kathy, My apologies for the discrepancy. The original recipe called for nutmeg but I always use ginger instead. Thanks for pointing out the error. I have updated the recipe so it should now be clear.
Thanks, Bridget. I made the cake and it’s delicious!
