Traditional Skillet Bannock with Molasses

Traditional Skillet Bannock with Molasses
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons Crosby’s maple molasses
- 2 tablespoons butter, melted
- 3/4 cup milk (adjust as needed)
- Additional butter or oil for frying
Instructions
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- Combine the melted butter and the Crosby’s maple molasses
- Make a well in the center of the dry ingredients and add the melted butter mixture, and milk.
- Stir until a soft dough forms. If the dough is too dry, add a little more milk, a tablespoon at a time, until it comes together.
- Turn the dough out onto a lightly floured surface and knead gently for a minute or two until smooth.
- Divide the dough into equal portions and shape each portion into a round, flat disc, about 1/2 inch thick.
- Heat a skillet over medium heat and add a little butter or oil.
- Once the skillet is hot, cook the bannock rounds for 3-4 minutes on each side, or until golden brown and cooked through.
- Remove from the skillet and serve warm with molasses butter
Notes
Alternative baking method: grease an 8 X 11 baking pan and spread the dough evenly, it will not be smooth, bake in a preheated 350 degree oven for 15-20 minutes.

1/2 cup (1 stick) unsalted butter, softened
¼ cup Crosby’s Maple Molasses
Pinch of salt
Instructions:
In a small bowl, combine the softened butter, molasses, and a pinch of salt.
Mix until well combined and smooth.
Taste and adjust the sweetness or saltiness if desired.
Transfer the molasses butter to a serving dish or shape it into a log using plastic wrap and refrigerate until firm.
Serve slices of molasses butter with warm skillet bannock.
