Traditional Skillet Bannock with Molasses

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons Crosby’s maple molasses
  • 2 tablespoons butter, melted
  • 3/4 cup milk (adjust as needed)
  • Additional butter or oil for frying

Instructions

  1. In a mixing bowl, whisk together the flour, baking powder, and salt.
  2. Combine the melted butter and the Crosby’s maple molasses
  3. Make a well in the center of the dry ingredients and add the melted butter mixture, and milk.
  4. Stir until a soft dough forms. If the dough is too dry, add a little more milk, a tablespoon at a time, until it comes together.
  5. Turn the dough out onto a lightly floured surface and knead gently for a minute or two until smooth.
  6. Divide the dough into equal portions and shape each portion into a round, flat disc, about 1/2 inch thick.
  7. Heat a skillet over medium heat and add a little butter or oil.
  8. Once the skillet is hot, cook the bannock rounds for 3-4 minutes on each side, or until golden brown and cooked through.
  9. Remove from the skillet and serve warm with molasses butter

Notes

Alternative baking method: grease an 8 X 11 baking pan and spread the dough evenly, it will not be smooth, bake in a preheated 350 degree oven for 15-20 minutes.

Instructions:

 

In a small bowl, combine the softened butter, molasses, and a pinch of salt.

Mix until well combined and smooth.

Taste and adjust the sweetness or saltiness if desired.

Transfer the molasses butter to a serving dish or shape it into a log using plastic wrap and refrigerate until firm.

Serve slices of molasses butter with warm skillet bannock.
