Sneaky Healthy Red Bean Snack Cookies

- 1 1/2 cups cooked kidney beans
- 1/2 cup oat flour
- 1/4 cup maple-molasses syrup
- 1/4 cup coconut oil, melted
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 tsp baking soda
- 1/8 tsp salt
- 1/4 cup dark chocolate chips
- 1/4 cup pumpkin seeds
Instructions
- Prepare the red beans: If using canned red beans, drain and rinse them thoroughly. Place the beans into the food processor and pulse a few times until they are mashed but still have some small bits for texture.
- Mix the dough: Add the oat flour, maple-molasses syrup, melted coconut oil, vanilla extract, cinnamon, baking soda, and salt to the food processor with the mashed beans. Pulse until everything is well combined and forms a dough-like consistency. Add the dark chocolate chips and pumpkin seeds, then pulse a few more times to mix them into the dough.
- Form the cookies: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Using a spoon or your hands, scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Gently press each dough ball down with the back of a spoon or your fingers to flatten them slightly.
- Bake: Bake for 10-12 minutes, or until the edges are lightly golden and the cookies feel firm to the touch. They will firm up more as they cool. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
