Ingredients

  • 1 cup unsalted butter
  • 1 cup semisweet chocolate chips, divided in half
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup Crosby’s Fancy Molasses
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup creamy peanut butter

Instructions

  1. Preheat your oven to 350°F. Grease an 8×8-inch square baking pan and line it with parchment paper.
  2. In a small saucepan, melt the butter over medium heat. Once melted, remove from heat, add molasses and whisk in half of the chocolate chips until fully melted. Transfer this mixture to a large bowl and allow it to cool for 5 minutes.
  3. In another bowl, sift together the flour and cocoa powder, then add in the salt.
  4. Whisk the brown sugar, eggs, and vanilla into the melted chocolate mixture until smooth. Fold in the flour mixture until well combined, then gently fold in the remaining chocolate chips.
  5. Pour the batter into the prepared pan and use a spatula to spread it evenly. Drop teaspoonfuls of peanut butter over the top of the batter, then use a knife to swirl it into the batter. Be careful when swirling the peanut butter: over-swirling may result in blending the peanut butter into the batter.
  6. Bake for 40 to 45 minutes, or until the center is set and doesn’t wobble when the pan is gently shaken. For a super fudgy center, bake for 35 minutes. If the peanut butter starts to brown, cover the brownies with aluminium foil after 25 minutes.
  7. Allow the brownies to cool completely in the pan before slicing and serving.
