Corey Richard’s Maple + Molasses Salmon Bites

If you’re a Hampton, New Brunswick local, you’re probably already familiar with the incredible Corey’s BBQ restaurant, Beer Daddy BBQ. So, it was a no-brainer for us to ask Corey for his expertise in creating a new recipe using our newest product, our Maple + Molasses. Once you taste it, you will see how Corey has knocked it out of the park with these delectable salmon bites. Quick, easy, and delicious, they were baked to perfection in the oven, but don’t hesitate to try them on a smoker or grill for that extra smoky flavour.

Corey Richard’s Maple + Molasses Salmon Bites

Corey Richard’s Maple + Molasses Salmon Bites: Succulent salmon bites marinated in a sweet Maple + Molasses and pork rub, baked to perfection for a delightful and easy dinner.

Ingredients

Scale
  • 1 whole, skinless salmon fillet (approx. 1 kg or 2 lb)
  • 1/2 cup Maple + Molasses
  • 2 tablespoons Beer Daddy BBQ pork rub seasoning*
  • 1 lemon wedge

Instructions

  1. Preheat the oven to 375°F.
  2. In a bowl, combine the Maple+ Molasses with the pork rub and mix well.
  3. Cut the salmon fillet into bite-size cubes.
  4. Add the salmon to the Maple+ Molasses and pork rub mixture, ensuring it’s well coated.
  5. Allow the salmon to marinate for 20 minutes.
  6. Place the marinated salmon on a baking dish lined with a silicone mat.
  7. For extra flavour and texture, sprinkle sesame seeds over the salmon (optional).
  8. Bake in the preheated oven for approximately 10 minutes.
  9. Squeeze some lemon juice after coming out of the oven.

Notes

*For the ultimate flavour experience, Beer Daddy BBQ’s Pork rub is highly recommended. However, if you prefer to create your own blend, here’s a simple recipe for a delicious pork rub. Combine the following spices to craft your seasoning blend:

Ingredients:

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon ground black pepper
  • 1 teaspoon salt

    Sounds awesome – any suggestion on the ratio for the maple syrup/molasses mixture? We cannot purchase the Maple+Molasses product here yet (emphasis on the “yet”; hoping it makes its way to Ontario shelves near us soon!). I am going to make this but was thinking I’d do 1/4 cup maple syrup and 1/4 cup molasses.
