Banana Sweet Loaf

There’s no better way to use up those spotty bananas on the counter than a loaf of banana bread – and this one leans further into fall than most. A spoonful of Crosby’s molasses swaps in for some of the sugar, giving the loaf a deeper, almost caramelized richness underneath the banana. Slice it warm with butter, or toast a piece the next morning; either way, it’s the kind of bake that makes the whole kitchen smell like fall.

Recipe:

For the dough:

3 very ripe bananas

1/2 cup of melted butter

1/2 cup of brown sugar

2 eggs

1 c. vanilla tea

2 to 3 c. tablespoon of Grandma molasses of fancy quality

1/4 cup of milk

1 1/2 cup of flour

1 c. tea baking soda

1/2 c. tea powder

1/2 c. tea of cinnamon

a pinch of salt

For icing:

1 cup of icing sugar

1 c. tablespoon of melted butter

1 c. tablespoon of molasses Grandma

1 to 2 c. tablespoon of milk

Instructions

1. Preheat and Prep: Heat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

2. Mix Wet Ingredients: Mash the ripe bananas in a large bowl. Mix in the sugar, melted butter, vanilla extract, and beaten egg until smooth.

3. Add Dry Ingredients: Gently stir in the flour and baking soda just until combined. Do not overmix.

4. Bake: Pour the batter into your greased loaf pan. Bake for 50 to 60 minutes, or until a wooden toothpick inserted into the center comes out clean.

5. Cool: Let the bread cool in the pan for 10 minutes, then move it to a wire rack to cool completely.

6. Make the Drizzle: Whisk the powdered sugar, milk (or water), and vanilla in a small bowl until smooth and runny. If it is too thick, add a few more drops of liquid; if too thin, add a bit more sugar.

7. Drizzle and Serve: Spoon or pipe the icing back and forth over the cooled banana bread. Let the glaze set for a few minutes before slicing.
