Ingredients

For the Dip

  • 1 can (540 mL/19 oz) white kidney beans, drained and rinsed
  • 3 cloves garlic
  • 1 tbsp (15 mL) curry powder
  • 2 tsp (10 mL) ground turmeric
  • ½ tsp (2 mL) salt
  • ¼ tsp (1 mL) each of ground cinnamon, ground ginger and ground nutmeg
  • Finely grated zest of one lime + juice of two limes (about ¼ cup (60 mL) of juice)
  • 1 tbsp (15 mL) Crosby’s Fancy Molasses
  • ⅓ cup (75 mL) olive oil

For the Mint & Cilantro Gremolata

  • ½ cup (125 mL) each of chopped fresh mint and chopped fresh cilantro
  • 3 tbsp (45 mL) olive oil
  • ¼ tsp (1 mL) chili flakes
  • Pinch salt
  • Zest and juice of one lime

Garnish

  • 1 tbsp (15 mL) Crosby’s Fancy Molasses
  • 1 tbsp (15 mL) olive oil
  • ½ cup (125 mL) roughly chopped peanuts

Instructions

1. Mix together gremolata ingredients.
2. Place prepared dip in a serving dish (or spread on an appropriate size platter).
3. Stir together molasses and olive oil.
4. Dollop gremolata evenly over dip and drizzle evenly with molasses/oil mixture and sprinkle evenly with peanuts.
5. Serve with crackers, toasted pita edges and veggie sticks.

Notes

~ Use this dip as a bed for grilled vegetables. Slather dip on a serving platter, top with grilled vegetables and drizzle dish with 1 to 2 tbsp (15 mL – 30 mL) of Crosby’s Fancy Molasses.

~ Don’t have white kidney beans on hand? Use canned chickpeas or lentils instead.
