Ingredients

  • 3/4 cup (170g) butter, softened
  • 1 cup (200g) granulated sugar, plus extra for rolling
  • 1/4 cup (60ml) Crosby's Fancy molasses
  • 1 large egg
  • 2 cups (250g) all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in molasses and egg until well combined.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Roll dough into 1-inch balls, then roll each ball in granulated sugar to coat.
  6. Place balls 2 inches apart on prepared baking sheets.
  7. Bake for 8-10 minutes until edges are set but centers are still soft. They’ll look slightly underbaked.
  8. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
