Peanut Butter Rice Krispie Squares

Peanut butter rice krispie squares are quick and easy. Made with pantry staples and ready in a flash.

Ingredients

  • 1 cup sugar
  • 1 cup Crosby’s Fancy Molasses
  • 1 cup peanut butter
  • 6 cups crisp rice cereal*
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Grease a 9″ x 9″ pan or line it with parchment paper.
  2. In a large pot bring sugar and molasses to the boil, stirring frequently.
  3. Remove from heat and stir in peanut butter.
  4. Mix well.
  5. Add rice cereal and stir to combine.
  6. Pack into prepared pan.
  7. Melt chocolate chips and spread on top (if using).
  8. Cool before cutting.

Notes

*To make these gluten free be sure to use GF crisp rice cereal.

Variation: Substitute honey or maple syrup** for 1/2 cup of the molasses.

**Squares made with maple syrup will be drier, less chewy and a little brittle.
