This recipe is a slight adaption of Dinners Dishes and Desserts’ Peanut Butter Oatmeal Bars recipe.

Ingredients

  • 1 cup butter, room temperature
  • 3/4 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 tbs Crosby’s Molasses
  • 1 cup creamy peanut butter
  • 2 whole large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour (or 1 cup all-purpose flour and 1 cup whole wheat flour)
  • 2 cups old fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp salt

Topping

  • 1 1/2 cup milk chocolate chips
  • 1 cup creamy peanut butter

Instructions

  1. Preheat oven to 350º F.
  2. Using an electric mixer, cream together the softened butter with both kinds of sugar. Add in the molasses and peanut butter and mix until light and fluffy. 
  3. Mix in the eggs and vanilla.
  4. Add in the oats, flour, baking powder and salt and mix until it is just combined.
  5. Press into a greased 13×9 inch baking pan and bake for 20-25 minutes.
  6. Let cool for 5 minutes.
  7. To prepare the topping, place the chocolate chips and peanut butter in a microwave-safe bowl and heat for 60 seconds. Remove and stir until the chocolate is completely melted.
  8. Pour over the bars and spread into an even layer.
  9. Let chill in the fridge for at least 30 minutes and serve.
