Ingredients

  • 3/4 tablespoon Crosby’s Molasses
  • 2 1/2 teaspoon baking soda
  • 1/2 cup water
  • 1 3/4 cup white sugar
  • 3/4 cup corn syrup

Instructions

  1. Prepare a 9″ x 13″  pan with nonstick spray or parchemin paper. Set aside.
  2. In a large saucepan, stir together all the ingredients exept the baking soda.
  3. Secure a candy thermometer to the pan, ensuring it doesn’t come into contact with the pan’s bottom.
  4. Bring mixture to a boil, and allow to cook until temperature reaches 300 degrees F.
  5. Once mixture reaches 300F, remove from heat.
  6. Mix in the baking soda thoroughly. Expect the mixture to foam significantly due to the chemical reaction. To avoid any burns from the hot sugar, it’s advisable to use a lengthy wooden spoon. Exercise caution, work swiftly, and be mindful of the high temperature.
  7. Pour the foaming mixture into the prepared pan, spreading it out evenly. Let it cool entirely. Once the toffee has cooled completely, take it out of the pan and break it into chunks.
  8. Enjoy!

Notes

  • While it’s essential to ensure the baking soda is thoroughly incorporated, be mindful that the extent of beating influences the final texture. If you prefer larger, airy toffee, minimize the beating and delicately pour it into the pan. Avoid disturbing it, as it will continue to rise and form substantial bubbles.
  • You can also dip the chunks into chocolate or caramel.
