The classic Molasses Feather Cake is a traditional delight known for its timeless appeal and light, fluffy texture. This cake achieves its distinctive flavor through the rich sweetness of molasses, creating a perfect balance between deep, robust taste and a subtle sweetness.

Ingredients

  • 2 1/4 cups sifted cake flour
  • 1/2 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 cup shortening or butter (soften)
  • 1 tsp. vanilla
  • 3/4 cup Crosby’s Fancy Molasses
  • 2 eggs
  • 1/2 cup milk

Instructions

  1. Sift flour, sugar, baking powder, baking soda and salt into mixing bowl.
  2. Blend in shortening or butter, Fancy Molasses, eggs and the remaining ingredients.
  3. Beat 2 minutes by hand or electric beater.
  4. Add milk and beat 2 more minutes.
  5. Pour into two well-greased layer cake pans.
  6. Bake at 375°F for 25 minutes
