Molasses Rolled Wafers

Ingredients:

  • ½ cup Fancy Molasses
  • ¼ cup shortening
  • ¼ cup sugar
  • ½ tsp salt
  • ½ cup sifted pastry flour
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 egg, well beaten

Directions:

  1. Heat molasses to boiling point, then add shortening, sugar and salt. Sift together flour and spices and add alternately with beaten egg to molasses mixture. Drop by teaspoon on a well-greased cookie sheet.
  2. Bake at 300°F for about 10 minutes. Cool 1 minute and curl around a greased wooden spoon handle. Cookies may be filled with Molasses Butter Frosting. (If cookies become too crisp to roll, heat a few minutes in oven.)
  3. For best results on this recipe, use Fancy Molasses. “Lite” molasses is not recommended.
