Ingredients:

Pastry for 3 double-crust 9 inch pies.
Top Part:
  • ¼ cup lard
  • ¼ cup butter
  • 2 cups sugar
  • 2 eggs
  • 2 tsp baking soda
  • 1 cup water
  • 2 cups flour
Lower Part:
  • 2½ cups water
  • 1 cup brown sugar
  • 1 egg
  • 1 cup Fancy Molasses
  • 2 tbsp flour
  • ¼ cup lemon juice
  • Grated rind of one lemon

Directions:

  1. Mix lower and top part separately.
  2. TOP PART: mix lard and butter, then add the next 5 ingredients and beat until smooth.
  3. LOWER PART: Beat remaining ingredients (except for pastry) together until smooth. Line muffin tins with pastry. Fill tarts ½ full with lower mix. Cover with top part until full.
  4. Bake at 375°F for 30 to 40 minutes. The top looks like a cake when done.
