Lemon Pie Cake Tart
Ingredients:
Pastry for 3 double-crust 9 inch pies.
Top Part:
- ¼ cup lard
- ¼ cup butter
- 2 cups sugar
- 2 eggs
- 2 tsp baking soda
- 1 cup water
- 2 cups flour
Lower Part:
- 2½ cups water
- 1 cup brown sugar
- 1 egg
- 1 cup Fancy Molasses
- 2 tbsp flour
- ¼ cup lemon juice
- Grated rind of one lemon
Directions:
- Mix lower and top part separately.
- TOP PART: mix lard and butter, then add the next 5 ingredients and beat until smooth.
- LOWER PART: Beat remaining ingredients (except for pastry) together until smooth. Line muffin tins with pastry. Fill tarts ½ full with lower mix. Cover with top part until full.
- Bake at 375°F for 30 to 40 minutes. The top looks like a cake when done.
