Molasses Baked Beans Recipe
Ingredients:
- 3 cups white beans
- ¼ lb. salt pork or bacon
- 1 medium onion
- 1/3 tsp. pepper
- ½ tsp. dry mustard
- Water
- 1/3 cup Crosby’s Fancy Molasses
- 2 tsp. salt
Directions:
- Pick beans over and soak overnight.
- Drain, cover with water by 2 inches and simmer for an hour.
- Drain and add to bean crock or heavy pot with a cover.
- Add chopped pork, onion, molasses, salt, pepper and mustard.
- Cover with water and bake in a covered bean pot for about 6 hours at 300°F.
- Add water if beans are dry.
- Serve hot.

I made the Molasses baked beans recipe in the Simple Fare book. It was my first time making baked beans. I used soldier beans as they were what my Mom used.
They were tasty but not as soft as I would think they should have been. Did they need to boil longer than the 30 minutes indicated in the recipe?
Also, is there anywhere I can find the nutritional information for your recipes?

Diane, I am happy that you made baked beans, and that it was your first time. I do usually boil mine for an hour, just to ensure a better texture. We do not have the nutritional breakdown of this recipe, but there are many free websites that let you add a recipe’s ingredients and it will give you the information you may want. My Fitness Pal is a good example.
can this recipe be made without the bacon?
