Apple Streusel Walnut Muffins

Ingredients:

  • 3 cups white flour
  • ¾ cup brown sugar
  • 1 tbsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • 1 tsp allspice
  • 1 cup 2% milk
  • 1 tsp vanilla
  • 3 large eggs
  • 1/3 cup Fancy Molasses
  • ¼ cup vegetable oil

Fold into the batter, before the dry ingredients are completely moist:

  • 3 large red apples peeled and diced
  • ¾ cup chopped walnuts
Topping
  • 1/3 cup flour
  • ¼ cup firmly packed brown sugar
  • 3 tbsp margarine or butter
  • 1 tsp cinnamon
  • ¼ cup chopped walnuts

Directions:

  1. To bake, preheat oven to 400°F. Grease bottoms only of medium size muffin cup (2½ x 1¼ inches), fill 2/3 full. Bake at once in a 400°F oven until golden brown, about 15 to 20 minutes. If muffins remain in the tins a few moments after leaving the oven, they will be easier to remove.
Topping
  1. In a small bowl, combine all topping ingredients. Mix well.
  2. Sprinkle topping over batter in muffin cups.
