I received an email the other day from a reader in search of oatmeal muffin recipes. She asked if I could add more recipes and I thought to myself, hmmm, we have loads of recipes that include rolled oats.

The problem, I realized, is that I don’t call them all oatmeal muffins. They go by all sorts of names. So in that way they have often been hidden from everyone.

    I am a type 2 diabetic senior in my seventies. How safe is it to cook and eat something with molasses like your muffins? I have always cooked many of my Mom’s recipes that include molasses and many recipes from your cookbooks. My kids love it and so do my grandkids. I want to be safe because of my diabetes.

      Hi Madeleine, You can think of molasses as similar to maple syrup — they’re both sugars but minimally refined and natural. If you track carbs there are about 15 g carbohydrates in a tablespoon of fancy molasses. Fewer in cooking molasses and blackstrap molasses.
